I have three cookbooks kindly sent to me by Penguin team. I decided to share them in a “what I eat in a day” type format/style. I only included two recipes from each cookbook just to help you see what type of recipes are included in each cookbook. I have had these for months and I’ve tried a lot of recipes thus far. So let’s get to it.

The Flexitarian Cookbook: Adaptable recipes for part-time vegetarians and vegans by Julia Charles
I am a part time vegetarian so I go through this quite often. I love that you have the flexibility of choosing different dietary options (vegan, vegetarian, pescatarian and meat-eater) based on your mood or occasion in one cookbook. I tried these recipes.
For Lunch: Velvety pumpkin and red lentil soup
This is the best soup; I’ve made it more than I’d like to admit.
For Dinner: Beetroot risotto
A slimmer you by Regine Du Plesis
This cookbook is meant to help you lose 10kg in 3 months by following the 1000kj eating plan. All the recipes follow this plan, so if its something you’d like to try you can go for it. I liked that all the recipes are things we already eat on a daily basis and she is just teaching you to count your calories. I think it’s a good way of introducing healthy eating. She goes to many details about the calculations.
For Breakfast: Hard-boiled egg with avocado and smoked trout
Anything with avocado, best believe I am on it. Avocado is just the best thing ever.
For Lunch: Grilled Paprika Drumsticks with Spiced Potato Wedges
Mindful Eating: 78 Recipes to cook your way to better health by Izelle Hoffman
I love that all the ingredients used in this cookbook can be used for multiple recipes, so you don’t have to buy things you don’t normally use just for one recipe and end up not using them again other than that recipe.
For Breakfast: Banoffee French Toast
The salted caramel and date sauce is the best alternative to any spread or sauce.
For Lunch: Quinoa and Chickpea Hash Browns
Yes, any opportunity of using avocado, then I am in.
I wish I could share more recipes but then I would be taking away from the authors work. However, I have been reaching out for these cookbooks a lot these past couple of months and I would highly recommend it if you are looking for a cookbook. Huge thanks to penguin random house for sending me these copies. I will be using them for the longest time.
